Mee Soup Recipe

 

Soup Ingredients:

Seafood (Optional, we used):
200g Fresh Prawns
100g Fresh Squid
200g Chicken
Freshly Ground Pink Himalayan Rock Salt
Freshly Ground Black Peppercorns
1 Bulb of Fresh Garlic
half a Cauliflower head
2 Carrots
2 Celery Stalks
2 Sprigs of Spring Onions
100g Mushrooms
100g Baby Corns
1 whole green Capsicum
1 bunch of Bok Choy
2 Sprigs of Fresh Coriander
2 Fresh Green Chilli

Soup Preparation:

  1. Peel, devein and wash prawns
  2. Wash and slice Squid tubes
  3. Wash and dice Chicken (Save some bones to create stock).
  4. Peel, wash and pound garlic
  5. Wash cauliflower and cut into individual florets
  6. Peel, wash and slice carrots
  7. Wash and slice celery stalks
  8. Wash and slice spring onions
  9. Wash and slice mushrooms
  10. Wash and slice capsicum
  11. Wash and slice Bok Choy, separating leaves
  12. Wash and cut baby corns in half

Method for Soup:

  1. Heat oil in a stockpot
  2. Add garlic and pepper
  3. When garlic is golden brown, add chicken (with bones).
  4. When chicken is golden brown add seafood
  5. Add vegetables
  6. Add 1.5 litres of water
  7. Add salt to taste

Serve with:

  • Freshly chopped Coriander leaves
  • Freshly cut green chilli
  • Noodles
  • Bean Sprouts
